Coming from the very best slopes of the Serra de Tramuntana exposed to the rising sun to achieve that give it the personality that so characterises it.
Organic vines selected from a 1.4 hectare plot.
Fermented with patience, stemmed and uncrushed grapes, fermented at a high temperature and macerated for 25 days in stainless steel and oak vats, remaining in their lees and without additives for 5 months. Aged for 12 months in American Oak and bottled for a further 10 months.
A very deep cherry colour. To the nose it is a balance of fruit, mineral and aged on lees and in barrels. It is agreeable to the palate, voluminous and elegant, with a velvety texture. A good balance between acidity and alcoholic strength. Very long backbone where the varietal and aged aromas re-emerge.
It combines well with all types of meat, including lamb and sucking pig. Also with cured cheeses, foie gras and recipes with fungi.
