Free-run rosé from the coldest Tramuntana vineyards that yield fresh aromas and balanced acidity.
Stemmed and crushed grapes are placed in a stainless steel vat, macerated for between 9 and 14 hours depending on the year and subsequently bled to obtain the best quality juice.
The racking is static and cold for 72 hours. The fermentation is fruit of a detailed study of 6 vintages where a decision was taken to select yeasts from Provence. Fermented at 16 ºC, without malolacticism.
Coral red, bright and appealing. To the nose it is reminiscent of red fruits (cherry, strawberry), minerals (wet stone) and local herbs. To the palate it is glyceric, sticky, with an elegant texture, a degree of salinity, with a lingering finish, harmonious and balanced.
It combines well with grilled vegetables, fish in sauces, rice, omelettes, moussaka and Italian cuisine.
