Variety known as the “grapes from hell”, because they are difficult to grow. They come from the slopes of the Serra de Tramuntana exposed to the rising sun. With few hours of sun and deep terrains which allows for long process of maturity, with a high level of acidity and great aromatic balance.
The elaboration is done through two methodologies.
Half of the grapes are pressed at low temperature directly to obtain a fresh and pure flower must. The racking is static for 72 hours, then it is fermented with its own yeasts at 13 ºC.
Separately a second winemaking is carried out with the grapes cold-macerated and inox for 48 hour to extract the own structure that provides the Viognier, and it is vinified at 16 ºC. Subsequently, the wines are blended according to the most basic criteria of the terroir expression.
It remains 2 months in bottle before being released onto the market.
Straw Yellow with smalls greenish trim. To the nose it is a balance of exotic fruits (pineapple, passion fruit) and stone fruits (peach). Its entry into the mouth is very voluminous and unctuous.
A certain saline character of our climate appears. It is supported with the structure and freshness that allows the aftertaste to be long and expressive.
It combines well with Mediterranean cuisine, white meat, nuts, rice dishes and fish grilled or in sauces.
