It is the flagship, autochthonous varieties redeemed; selection of vines and of each individual grape. Production limited to 1,600 kg/ha. Organic viticulture from a 1 hectare plot. Prepared only in exceptional years, receiving no mechanical treatment, fermented at a high temperature and macerated for 40 days in oak vats, remaining on its lees and without additives for 8 months. Aged for 12 months in French Oak and bottled for a further 20 months.
Very deep cherry colour. To the nose it is a balance of spices, minerals and considerable aging. To the palate it is elegant and subtle, pleasant, and with all the body and structure worthy of a great wine. A perfect balance between acidity and alcoholic strength.
A very long backbone where the spicy aromas inherent to the variety re-emerge.
Ideal for the best meat, stews and strong-flavoured cheeses.
